Chef Eddie Matney is at the helm of the wildly delicious Eddie’s House in Old Town Scottsdale. The well-respected and talented chef has been an established part of the Valley’s culinary scene and also happens to be a fun and engaging cooking instructor, too! Chef Eddie’s next class will take place 6-8:30 p.m. Monday, Nov. 30 and will cover tasty tips for holiday celebrations from Hanukkah to New Year’s. “Cooking With Eddie” is presented by Valley of The Sun Jewish Community Center and Allstate Appliances.
I had the chance to sit in for the Thanksgiving themed cooking class last week and the experience was everything I had hoped for – soup to nuts! Over the course of a few hours, Chef Eddie dazzled everyone’s taste buds and served a full Thanksgiving meal to all in attendance. Not only did I get the chance to watch Chef Eddie working the kitchen, he also imparted some fantastic tips which included these cool culinary morsels:
Aluminum foil “breathes” and plastic wrap doesn’t . Use high quality plastic wrap for best results.
A 12 pound boned turkey will cook in the oven in about 45 minutes.
If you open an oven, the temperature will drop 75 degrees in five seconds.
There is a proper way to hold a knife while chopping and it doesn’t involve lifting the knife completely off the board.
Using salt during the cooking process is better than adding raw salt to food once cooked
Hulled pumpkin seeds are called “pepitas.”
Chef Eddie uses figs from the Valley of the Sun Jewish Community Center in some of his dishes at Eddie’s House in Scottsdale.
He also imparted some great “Eddie-isms:”
“The JCC (Jewish Community Center) is a pretty special place in my book!”
“Don’t cut Serrano chilies and then go use the restroom.”
"You should always eat what you want to eat and just do some extra time on the treadmill.”
The November 30 class will include some of Eddie’s own recipes, printed for attendee’s convenience and a meal cooked by Chef Eddie. The meal and provided recipes will include “Not Your Grandma’s” Traditional Potato Pancakes, Asparagus Risotto Cakes, Stuffed Pasta Meatballs, Pastrami Seared Salmon Sliders and Pistachio Baklava. The food is exceptional, the company is fine and Chef Eddie’s humor is always a hit!
The holiday themed class is $75 per person and class size is limited, so sign up early! Class takes place at Allstate Appliances Showroom located at 15250 N. Hayden Rd., Scottsdale.
